Avocado Jicama Salad with Summer Watermelon
INGREDIENTS
- 2 avocados, sliced
- 1 jicama, peeled and sliced very thin
- 1 red onion, sliced thin
- 3 heirloom tomatoes, cut into different sizes
- ¼ watermelon, cut into ½ inch cubes
- 2 bunch baby arugula
- 1 oz. cotija cheese
- ½ cup Saucy Salsa Verde
- ½ cup olive oil
- 1 tsp. kosher salt
- 1 tsp. cracked black pepper
DIRECTIONS
- Add salsa into mixing bowl, then slowly whisk in the olive oil till incorporated, season
with a pinch of salt and pepper. - Layer the arugula on the bottom of a large plate, then add remaining ingredients
playfully on the plate and drizzle the dressing on top and finish with a good sprinkle of
the cotija cheese.
