Avocado Jicama Salad with Summer Watermelon


  • 2 avocados, sliced
  • 1 jicama, peeled and sliced very thin
  • 1 red onion, sliced thin
  • 3 heirloom tomatoes, cut into different sizes
  • ¼ watermelon, cut into ½ inch cubes
  • 2 bunch baby arugula
  • 1 oz. cotija cheese
  • ½ cup Saucy Salsa Verde
  • ½ cup olive oil
  • 1 tsp. kosher salt
  • 1 tsp. cracked black pepper



  1. Add salsa into mixing bowl, then slowly whisk in the olive oil till incorporated, season
    with a pinch of salt and pepper.
  2. Layer the arugula on the bottom of a large plate, then add remaining ingredients
    playfully on the plate and drizzle the dressing on top and finish with a good sprinkle of
    the cotija cheese.
