Chipotle & Chorizo Quesadillas


INGREDIENTS
  • 1 lb. Mexican chorizo
  • 1/2 jar. Saucy Chipotle Salsa
  • 8oz. Shredded Monterey Jack Cheese
  • 8oz. Shredded Cheddar
  • 1 each. Red onion, small diced for garnish

 

DIRECTIONS
  1. Sauté chorizo till it browns, drain excess grease
  2. Add chipotle salsa and simmer with the chorizo for 3 minutes
  3. Layer cheese and chorizo mixture in the tortillas
  4. Crisp the quesadillas in some avocado oil on both sides and serve with diced red onion and your favorite Saucy Salsa
