SHRIMP CULICHI with SAUCY SALSA VERDE
INGREDIENTS
- ½ lb Shrimp (16-20)
- ½ jar Saucy Salsa Verde
- 1 each Avocado
- ½ bu. Cilantro, rough chopped
- ¼ cup Coconut yogurt
- 4 each Green onions, cut into small pieces
- 2 each Radish, shaved thin
- ½ each Red onion sliced thin
DIRECTIONS
- Combine salsa, avocado, cilantro, yogurt, and green onion and blend until smooth consistency. Season with salt and pepper.
- Heat a sauté pan with olive oil and sear shrimp on both sides for 2 minutes each, season with salt and pepper.
- Spoon sauce in the bottom of the plate, layer the shrimp and garnish with shaved radish, red onion, and cilantro sprigs.
